牛柳肉(橫紋直切片) 180克
芫荽 120克
薑(拍裂) 1小塊
蒜頭(拍裂) 3瓣
紅辣椒(去籽及切絲) 1隻
番薯粉 1茶匙
油 適量
蠔油  1湯匙
Beef tenderloin(cut against the grain)  180g
Coriander  120g
Ginger(crushed)  1 small pices
Garlic(crushed)  3 cloves
Red hot chilli(seeded and shredded)  1
Sweet potato starch  1 tsp
Oil  some
Oyster sauce  1 tbsp

 
牛肉醃料 | BEEF MARINATE  
 
水 1湯匙
生抽 1茶匙
老抽 1/2茶匙
糖 1/2茶匙
米酒 2茶匙
胡椒粉 適量
Water 1tbsp
Soy sauce 1tsp
Dark soy sauce 1/2tsp
Sugar 1/2tsp

Step 1
芫荽浸鹽水十五分鐘,瀝乾備用。
Soak the coriander in salty water for 15 minutes. Drain well and set aside.

Step 2
牛肉加入醃料醃十五分鐘。
Marinate the beef for 15 minutes.

Step 3
牛肉與番薯粉、1茶匙油拌勻。
Mix the beef with sweet potato starch and 1 tsp oil.

Step 4
鑊內燒熱油,薑和蒜頭爆香後棄掉。
Heat oil in a pan. Fry the ginger and garlic until fragrant and then discard.

Step 5
鑊內加入牛肉,快炒至七成熟,盛起瀝油。
Add the beef into the pan and stir-fry quickly until 70% cooked. Remove and drain oil.

Step 6
原鑊下芫荽莖和辣椒絲炒香。
In the same pan, add the coriander stems and the shredded chilli and fry until fragrant.

Step 7
加入牛肉和蠔油。
Add the beef and oyster sauce.

下芫荽葉炒至牛肉九成熟,盛起。
Add the coriander leaves and fry the beef until 90% cooked and remove.
